Peeling Back the Onion Layers

I never thought I’d get excited about onions. But here we are.

There’s something about growing them from seed that feels like a secret only a few of us are in on. Walk into any grocery store, and you’ll see the same three options: yellow, white, and red. Maybe a sweet onion if you’re lucky. But that barely scratches the surface as to what’s out there.

When you start onions from seed, the possibilities explode. You can grow sweet ones, sharp ones, big ones, and tiny cocktail-sized ones. And let me tell you - when you grow your own, the flavour is something else entirely.

The best part? Onions basically take care of themselves. You start them early, give them a little space, and they just go. No fussy care routines, no high-maintenance demands - just slow, steady growth. And while you wait for those bulbs to size up, you can snip a few green tops here and there to toss into your meals. A little in scrambled eggs, a sprinkle in a soup - just a taste of what’s to come.

But the real magic happens when you start them from seed. It gives you access to so many incredible varieties that you’d never find in a grocery store or even at your local nursery. If you’ve never done it before, don’t worry - I’ve got you covered.
